Quick Summer Squash Recipe


Do you have a garden this year? Do you have an abundance of summer squash or zucchini? Our garden has been producing enormous amounts of summer squash and zucchini. My hubby has been cooking up this summer squash recipe in our cast iron skillet at least 2x a week, and it is just superb! It’s a quick recipe that has a minimal amount of ingredients.

Ingredients

  • 3 – small squash (or 2 large)
  • 1 – white/yellow onion
  • about 1/2 cup cornmeal (until it’s all coated)
  • 3 – 4 TBSP of vegetable oil
  • salt and pepper to your liking

Prep Time: 5 minutes

Cook Time: 25 minutes

That’s it! You will notice I put small squash; we use squash from our garden and they are not as large as the ones I see at the store. Also, ingredient amounts depends on the size of your cast iron skillet. I would say ours is medium sized (size 8).

Directions

First step, is prepping the vegetables, getting the oven preheated, and the oil warming up on the stove. Preheat the oven to 450. While the oven is warming, chop the squash and onion and put into a large mixing bowl. At this point, get your oil warming up in the cast iron skillet on the stove top. Add salt, pepper, and cornmeal and toss in bowl until most is coated in the cornmeal.

Once your oil is warmed up (hear the popping noises of the oil), pour your mixture into the skillet. Cover with a splatter guard if you have one. After a minute or two, stir the mixture, let it sit for another couple minutes. Continue this for about 5 minutes or until the cornmeal is starting to brown.

Then put your skillet in the oven and cook about 10 minutes. Pull it out, give it a good stir, and pop back into the oven for another 10 minutes. After it has cooked about 20 minutes (cornmeal will have darkened and has crispy look to it), pull it out and dump onto a plate. We always put on paper towels to soak up the extra oil, but you don’t have to do that.

Give it another few minutes to cool, then it’s eating time! We make this with yellow summer squash, but have also thrown in zucchini from time to time.
